“What to cook, what to cook??”
That’s me in panic mode every time I have little time to prepare for meals. I know it’s not an excuse, but who wouldn’t be overwhelmed and get carried away by the busy-ness of the day?
So I sat down and wrote a list of easy meals I can cook in a jiffy. Here are some of my favorites – they are quick, healthy & definitely yummy!
1. Banana Pancakes
Pancake for me is L-O-V-E! Since we usually have bananas at home, I turn it into something special before the bananas over ripens. All you need are:
Bananas + Whole wheat flour + Egg + Jam or any pancake toppings
Simply mix together two mashed bananas, 1/3 cup whole wheat flour, an egg then fry away. This is good for 1-2 people. The bananas are sweet already so no need to add sugar. Easy right?
Try this easy hummus recipe to add a little Middle Eastern flare in your kitchen. You just need:
Chickpeas + Garlic + Lemon Juice + Olive oil
Blend together in a food processor a can of 450g chickpeas (drained), 2-3 garlic cloves, juice of half a lemon, 2-3 tablespoons of olive oil & a pinch of salt. Pulse away until you get the texture you want. Then scrape the hummus into a container, drizzle some olive oil and add a dash of paprika on top. Enjoy it with your favorite crackers or pita bread.
3. Chili Garlic Pasta
This is one of my go-to-recipes every time I have leftovers. You can whip up this yummy Chili Garlic Pasta if you have any leftover spaghetti noodles and have these other ingredients in your cupboard. You need:
Spaghetti noodles + Chili flakes + Garlic + Italian Herbs
Sauté garlic & chili flakes in a pan. Then add the leftover spaghetti noodles and season with Italian herbs, salt & pepper. Remove from heat & serve. You can add cooked bacon or left over chicken for a little texture on top.
4. Macadamia Cookies
You’ll be amazed on how yummy these cookies are. They are crispy on the outside and chewy on the inside. It’s perfect for people who are looking for gluten-free desserts. To make these cookies, you will need:
macadamia nuts + Egg Whites + Sugar + Salt
Toast 2/3 cups Macadamia nuts in a pan until slightly brown. Remove from the pan and let it cool before chopping them coarsely. In a separate bowl, beat 1 egg white and a pinch of salt with an electric mixer until stiff peaks form. Gently fold in 1/3 + ½ tsp of sugar and chopped nuts. Spoon the batter on the baking sheet. Bake in a preheated 150 degrees C (300 degrees F) oven for 30 minutes. Remove and place on a wire rack to cool. Store in an airtight container and consume within a week.
5. Pizza Margherita
No need to make or buy pizza crust if you have wheat tortilla on hand. To make a simple pizza Margherita, you need:
Wheat Tortilla + Tomatoes + Cheese + Fresh Basil
Drizzle a little olive oil over the wheat tortilla. Place thinly sliced tomatoes and grated cheese across the entire tortilla. Bake the pizza in a 180 degree Celsius oven for 8 minutes or until sufficiently crispy and melted the way you like it. Remove it from the oven, top it with fresh basil, and enjoy while it’s hot.
